This slow cooker goat pot roast recipe is as easy as it is hearty. It only takes fifteen to twenty minutes to prepare the meat and vegetables, load the crockpot, and set it on low for 8-10 hours. By dinnertime, you will have a delicious meal ready and waiting to dish out!
Goat Pot Roast vs. Beef Chuck Pot Roast
Pot roast is a classic one-pot dish that can be made ahead of time. When cooked low and slow, roasts are tender, juicy, and satisfying. Coated in aromatic spices and bathed in savory liquid, pot roast is the ultimate comfort food to pair with potatoes and vegetables.
You can make an amazing pot roast with any type of meat. Traditionally, pot roast is made with beef chuck roast, an inexpensive cut with a good ratio of fat to meat.

Equipment Needed for Making Goat Pot Roast
- Paper towel
- 12-inch cast iron pan
- Tongs
- Measuring cups and spoons
- Slow cooker
- Liquid measuring cup
- Cutting board
- Kitchen knife
- Forks for shredding the meat
A pat with paper towel, some salt and pepper, and a quick sear in a cast iron pan make for a decadent crust to lock in moisture. Add the remaining ingredients to a 6-quart slow cooker, set it, and forget it for 8 to 10 hours. Let the roast rest for 15 minutes, shred, and serve.
Ingredients for Goat Pot Roast
- 2-3 lbs. goat sirloin roast
- Kosher Salt
- Coarse ground black pepper
- 1 tablespoon olive oil
- 1 large yellow onion
- 3 tablespoons minced garlic
- 1 ¼ cups beef stock
- ¾ cups red wine
- 3 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 ½ lbs. baby potatoes
Directions for Making Goat Pot Roast
- Heat 1 tablespoon of olive oil in a cast iron pan.
- While the oil is warming up, pat your roast dry with paper towel.
- Generously season all sides of the roast with salt and pepper.
- In the cast iron pan, sear the roast about 4 minutes per side until a nice crust forms. Then with tongs, transfer the roast to your slow cooker.
- Dice one large yellow onion and add it to the hot, empty cast iron pan.
- Add 3 tablespoons minced garlic to the onion and cook for about 2 minutes, stirring frequently. Add more oil to the pan as needed.
- Cover the roast with the garlicy onion mixture in the slow cooker.
- Now add beef stock, red wine, and Worcestershire sauce to the cast iron pan and put it on low heat. Scrape the pan to loosen any residual meat and onion bits while the liquid warms.
- Pour the liquid into the slow cooker to cover the meat and add the thyme and rosemary.
- Add potatoes, carrots, or any other vegetables on top of the meat and sprinkle with salt and pepper.

- Cover the slow cooker with its lid and set it to low. Cook for 8-10 hours.
- Once it is ready, scoop out the potatoes and remove the meat from the broth. Let the roast rest for 10-15 minutes, then shred with two forks. You can add a teaspoon of cornstarch to the broth in a pan on the stove to thicken it into gravy.
