How to Make Farm Fresh Mayonnaise with an Immersion Blender

Mayonnaise is a staple in our house for sandwiches and burgers. I used to buy Kraft Real Mayo from the store but have since redefined “real mayo” by making my own!
With a plethora of farm fresh eggs and a desire to provide my family with the most nutritious whole foods at mealtimes, I perused online recipes and then experimented until I found a recipe everyone loves.
Making mayonnaise is really easy and only takes a few minutes! Here’s how I do it with an immersion blender and ingredients you probably already have on hand.
Materials Needed for Making Farm Fresh Mayonnaise with an Immersion Blender
- Immersion blender
- Tall narrow jar
- Measuring spoons
- Liquid measuring cup
- Rubber spatula
- Pint glass jar with lid
I love my Betty Crocker immersion blender, I have one that I use for cooking and one that I use for soap making. It is inexpensive, works well, and comes with a tall, narrow mixing beaker that I use to make the mayonnaise. Use measuring spoons and cups for adding ingredients and a rubber spatula to transfer the mayonnaise to a pint-sized glass jar for storing in the refrigerator. I prefer the wide-mouthed mason jars.
Ingredients for Making Farm Fresh Mayonnaise
- One fresh whole egg
- 1 tablespoon stone ground Dijon mustard
- 1 tablespoon red wine vinegar
- 1 teaspoon lemon juice
- ¼ teaspoon Kosher salt
- ¼ teaspoon garlic powder
- 1 cup organic sunflower oil
I make my mayonnaise with farm fresh eggs, you can use pasteurized eggs from the store if you prefer. The mustard, vinegar, lemon juice, salt, and garlic powder give the mayonnaise a nice tang and help hold the emulsion together. I use organic sunflower oil for my mayonnaise because it has a mild, sweet flavor, you can use your favorite oil instead if you want.
Directions for Making Farm Fresh Mayonnaise with an Immersion Blender

- Crack one whole egg into your tall, narrow mixing jar
- Add the mustard, vinegar, lemon juice, salt, and garlic powder to the egg in the tall, narrow mixing jar
- Add 1 cup of sunflower oil to the jar, it will sit on top, don’t mix it in.
- Put the immersion blender into the tall, narrow mixing jar and center it over the egg at the bottom
- With the immersion blender sitting on the bottom of the tall, narrow mixing jar, turn it on high speed and keep it in place for about 20 seconds. The bottom ingredients will form a thick emulsion, and some oil will be on the top.
- Slowly begin to lift the immersion blender in the jar on high speed to incorporate the rest of the oil, it will be very thick!
- Now the mayonnaise is done and you can use a rubber spatula to transfer it to a pint-sized glass jar
- Place a tight-fitting lid on the jar and store your mayonnaise in the refrigerator for up to two weeks
- Use as a condiment for your favorite meals or make a creamy, tangy salad!
